Vegetable Cutlet ( using bread, potatoes and veggies)



This recipe helps me use up the left over bread in my kitchen. For a long time, I had no clue as to what I could possibly use left-over bread for...I found my answer ...

Things you will need:

Bread -6 to 8 slices- I used left over
Potatoes - 2 - well cooked and mashed
Mixed Veggies ( Chopped Carrots, Peas, Chopped Green Beans) - 1/2 cup
Onion - 1 medium- diced
Green chillies- 3 - diced
Tomato- 1 finely chopped 
Cilantro- chopped
Garam masala powder- 2 tsp ( add more if you like it spicy)
Salt to taste
Ginger- 1/2 inch square cube - chopped
Red Chilly Powder-1 tsp -optional if u like it spicy
Egg white- from 2 egg ( or you can use Maida paste to make it purely vegetarian)

Preparation Method:

In a pan , add some oil and fry onions, ginger, green chillies until they lose their raw smell.

In a bowl add bread, potatoes , onions, mixed veggies, tomatoes, green chillies, garam masala, pepper powder, lime juice, salt to taste,chilly pwd,and cilantro. Mix it well to form a dough. This will take some time. The juices from the tomatoes and other wet ingredients should help bind this mixture together. If you feel like it, add just enough water to form the dough.

Take small lemon-size piece off of the dough and flatten it in your palm in the shape of a cutlet.



Dip it in egg white and then in bread crumbs. Make sure its well covered by the egg white and bread crumbs.

Tip : You can use maida paste ( mix maida /all purpose flour and water to form a thick paste) instead of egg whites.

Deep fry in oil.



Serve 'Cutlets' hot with with ketchup or any chatpata sauce.
