Green Eggplant Fry / Vazhuthananga Mezhukupuratti





Things you will need:






Preparation Method:

  • Heat oil in a pan.
  • Add mustard seeds and wait till they splutter.
  • Now add green chillies,curry leaves and red whole chillies and stir well.
  • Once done,add turmeric powder and red chilli powder until the raw smell is gone.
  • Now add eggplant,salt and cook covered in low-medium heat for 5 mins.Stir occassionally.
  • Make sure there is no water content in the pan.
  • Do a taste test and add salt if necessary.

Green Eggplant Fry / Vazhuthananga Mezhukupuratti can now be served with warm rice and Sambharor Mambazha Pulissery.

Moong Daal Curry







Things you will need:



Preparation Method:


  • Cook the soaked daal in a pressure cooker until well-done.
  • In a pan, heat oil.
  • Then add mustard seeds. 
  • Once they splutter, add cumin seeds.
  • Now add onion,garlic,green chillies,garlic (sliced), curry leaves, red whole chilli until onion turns golden brown.
  • Grind Coconut, Cumin seeds (few), and garlic to a fine paste.
  • At this point add the cooked daal, ground paste, turmeric powder and chilli powder.
  • Mix well and cook with the lid closed on low-medium flame. Add water to bring it to desired consistency.
  • Stir occasionally to ensure the bottom does not burn.
  • Now add salt to taste and mix well.
  • 'Moong Daal Curry' is now ready to be served with Chappathi or Rice.

Very Easy Egg Sandwich





Things you will need :




Preparation Method:

  • In a pan spread some butter and toast the bread slices.Once done set them aside.
  • Heat the pan on low - medium flame and add butter ( approximately 1 tsp).
  • Now add the onions,  green chillies, curry leaves and fry till the onions are golden brown in color.
  • Add salt and pepper powder and mix well.
  • Keep the onion mixture together in the pan. ( Make sure its not spread around in the pan.)
  • Now, carefully, break the egg and place it directly on top of the onion mixture and allow it to cover all of the mixture in the pan.
  • Don't worry if you break the yolk in the process.
  • Increase the flame to medium high for 2 minutes and wait for the egg to be cooked well.
  • Reduce the heat and turn the egg over so it cooks well on the other side as well.
  • Once done set it aside.
  • Now place one bread slice on the pan ( on low medium flame) ,then stack by placing a cheese single and then the egg followed by the second bread slice on it and wait for 2 minutes.
  • The cheese should begin to melt. 
  • Remove the sandwich from heat and serve hot with milk, tea or coffee.


Tip:

This sandwich is a very easy recipe. Just prep the ingredients ahead of time and make a quick breakfast .

Vegetable Cutlet ( using bread, potatoes and veggies)



This recipe helps me use up the left over bread in my kitchen. For a long time, I had no clue as to what I could possibly use left-over bread for...I found my answer ...

Things you will need:

Bread -6 to 8 slices- I used left over
Potatoes - 2 - well cooked and mashed
Mixed Veggies ( Chopped Carrots, Peas, Chopped Green Beans) - 1/2 cup
Onion - 1 medium- diced
Green chillies- 3 - diced
Tomato- 1 finely chopped 
Cilantro- chopped
Garam masala powder- 2 tsp ( add more if you like it spicy)
Salt to taste
Ginger- 1/2 inch square cube - chopped
Red Chilly Powder-1 tsp -optional if u like it spicy
Egg white- from 2 egg ( or you can use Maida paste to make it purely vegetarian)

Preparation Method:

In a pan , add some oil and fry onions, ginger, green chillies until they lose their raw smell.

In a bowl add bread, potatoes , onions, mixed veggies, tomatoes, green chillies, garam masala, pepper powder, lime juice, salt to taste,chilly pwd,and cilantro. Mix it well to form a dough. This will take some time. The juices from the tomatoes and other wet ingredients should help bind this mixture together. If you feel like it, add just enough water to form the dough.

Take small lemon-size piece off of the dough and flatten it in your palm in the shape of a cutlet.



Dip it in egg white and then in bread crumbs. Make sure its well covered by the egg white and bread crumbs.

Tip : You can use maida paste ( mix maida /all purpose flour and water to form a thick paste) instead of egg whites.

Deep fry in oil.



Serve 'Cutlets' hot with with ketchup or any chatpata sauce.
