<span style="font-weight: bold;">Preparation Method:</span><br />
<br />
Heat ghee in a thick-bottom pan. <br />
Add Besan and wait until it appears frothy.<br />
Now add wheat flour and stir on medium high flame. <br />
This will require continuous stirring until the flour it roasted well and gives a cookie-like aroma.<br />
Once done, set it aside to cool.<br />
Now add powdered sugar, cardamom and cashew and mix well.<br />
Make sure there are no lumps.<br />
Now form lime-size balls out of the mixture and serve with raisins decorated on top.<br />
<br />
Its a very delicious and yummy treat , loved by all, and easy to prepare for any festive occasion.<br />

<li>Then add green chillies,curry leaves and saute till the raw smell is gone.</li>
<li>Now add red chilli powder and stir well. </li>
<li>Remove from flame and set aside to cool.</li>
<li>After around an hour or so , when the above mixture has cooled down, add the lemon pieces,salt and vinegar and mix well. </li>
<li>Later store in an airtight container.</li>

This is a typical dish for every Kerala household. Its very easy to prepare and tastes very good.Try it at home using the following recipe...<br />
<br />
<strong>Things you will need:</strong><br />
<br />
Mango-2 ripe and juicy, Medium sized , peeled and cubed<br />
Coconut-1 cup shredded<br />
Cumin seeds- 2 tsp<br />
Curry Leaves<br />
Salt to taste<br />
Red whole chillies-2 or 3<br />
Green Chillies- 3 or 4 slit in half lengthwise<br />
Fenugreek powder- 1 tsp<br />
Turmeric powder- 1 tsp<br />
Oil- 1 tbsp , preferably Coconut Oil<br />
<br />
<strong>Preparation Method:</strong><br />
<br />
In a cooking vessel add mango , salt, turmeric powder, fenugreek powder,green chillies ( save one for later use)and curry leaves and water.<br />
Make sure mango is just immersed in the water. <br />
Do not add too much water.<br />
Bring this to boil and cook until mango is nice and tender.<br />
In the mean while grind the shredded coconut , remaining green chili and cumin seeds to a fine paste. <br />
Add water just enough to grind to a fine paste.<br />
Once mango is cooked add this paste to it and simmer.<br />
For garnishing , heat oil in a pan ,add red whole chillies and mustard. Once the mustard splutters,add this to the simmering mango curry.<br />

Mango curry is now ready to be served with steamed rice and <a href="http://heartyfeast.blogspot.com/2009/09/yucca-root-stir-fry.html">Kappa Mezhkupuratti</a>.<br />

<strong>Things you will need:</strong><br />

Boneless Skinless chicken- 1 lb<br />
Corn Flour- 2 tbsp<br />
Black Pepper powder-1 tsp<br />
Ginger paste - 1 tsp<br />
Garlic paste - 1 tsp<br />
Egg-1<br />
Oil- 4 tbsp <br />
Salt to taste<br />

<strong>Preparation Method:</strong><br />
<br />
Cut chicken into bite-size cubes.<br />
Now add corn flour,black pepper,ginger and garlic paste,salt to taste , and egg to the chicken.Mix well and set aside for 30 mins.<br />
<br />
In a pan , heat 3 tbsp oil. Now add marinated chicken one-piece-at-a-time to this oil.<br />
Fry in medium heat until chicken pieces are brown in color.Remove from heat and serve hot.<br />
<br />

<li>In a bowl add salt ,lime juice,onion paste,curry leaves,coriander powder,red chilli powder and black pepper powder.</li>
<li>Using about 1 tbsp water mix the powders into a smooth paste.</li>
<li>Marinate the pieces with this paste and set aside for 30 mins.</li>
<li>Heat oil in a deep-frying pan.</li>
<li>Add the pieces one at a time and deep fry in medium flame.</li>
<li>Turn the pieces over and fry .</li>
<li>Once done the steaks will have nice brown color on both sides.</li>
<li>Fried King Mackerel Steaks are now ready to serve.</li>

<b>Preparation Method:</b><br />
<br />
<ul><li>In a pan spread some butter and toast the bread slices.Once done set them aside.</li>
<li>Heat the pan on low - medium flame and add butter ( approximately 1 tsp).</li>
<li>Now add the onions, green chillies, curry leaves and fry till the onions are golden brown in color.</li>
<li>Add salt and pepper powder and mix well.</li>
<li>Keep the onion mixture together in the pan. ( Make sure its not spread around in the pan.)</li>
<li>Now, carefully, break the egg and place it directly on top of the onion mixture and allow it to cover all of the mixture in the pan.</li>
<li>Don't worry if you break the yolk in the process.</li>
<li>Increase the flame to medium high for 2 minutes and wait for the egg to be cooked well.</li>
<li>Reduce the heat and turn the egg over so it cooks well on the other side as well.</li>
<li>Once done set it aside.</li>
<li>Now place one bread slice on the pan ( on low medium flame) ,then stack by placing a cheese single and then the egg followed by the second bread slice on it and wait for 2 minutes.</li>
<li>The cheese should begin to melt. </li>
<li>Remove the sandwich from heat and serve hot with milk, tea or coffee.</li>

FYI, Canned beans are easier to use and they cook well sooner.<br />

<strong>Preparation Method:</strong><br />
<br />
Peel and cut the yucca root into 1 inch cubes.<br />
Add the yucca root , salt and turmeric powder and water in a pan.<br />
Add enough water to immerse the yucca root. <br />
Now bring this to a boil and cook until the root is nice and tender. Make sure it is not overcooked.<br />
Once done use a strainer to drain the water off.<br />
Heat oil in a pan .<br />
Now add, mustard seeds and wait till they splutter.<br />
Then add , Onion , green chillies, Curry leaves, and stir on medium-high heat.<br />
Once onion is carmelized, add red chilli powder and stir.<br />
Now add the cooked root to this pan and stir for 2 minutes. Do a taste test and add salt if necessary.<br />

<li><i><span style="color: black; font-family: Arial, sans-serif; font-size: 9pt;">Beat Sugar and Butter in a mixing bowl with a wooden spoon/hand mixer. Then add the eggs and beat it again for two minutes. Add Vanilla essence to it and beat again.</span></i></li>
<li><i><span style="color: black; font-family: Arial, sans-serif; font-size: 9pt;">Now add the mashed bananas to it and mix it for 3 minutes approximately. Then, add the sieved flour mix to this bowl adding little at a time, and mixing it continuously. Mix it for 4 minutes.</span></i></li>
<li><i><span style="color: black; font-family: Arial, sans-serif; font-size: 9pt;">Pour this to the baking ware/loaf pan and bake it for an hour exactly. </span></i></li>

<li>Add cumin seeds, ginger, onions and garlic.</li>
<li>Once golden brown , add curry leaves and green chillies and sauté .</li>
<li>Keeping low-medium flame, add turmeric, coriander, red chilli, cinnamon, cloves and garam masala powder and stir until it looses its raw smell.</li>
<li>Now add the chicken , salt and 1/4 cup water.</li>
<li>Bring this to a boil and cook until chicken is nice and tender .</li>
<li>Then add fried paneer and let it simmer for 2 minutes.</li>
<li>Now add lime juice and kasoori methi and after a final stir garnish with cilantro.</li>

<ul><li>Pressure cook Toor daal and Chana daal together until they are completely mashed. This might take a few minutes. Make sure there is enough water in the pressure cooker for the daals to cook well.</li>
<li>In another pan , heat oil and add mustard seeds,cumin seeds, dry red chillies.Wait till they splutter.</li>
<li>Now add onions, green chillies, tomatoes,ginger paste and saute well.</li>
<li>Then add Garam Masala,Coriander powder,Red Chilli powder,Turmeric Powder and saute well on low flame.</li>
<li>Add carrots, dudhi and cook well on medium-high flame.</li>
<li>Once the veggies are cooked, add daal along with 3/4 cup water, salt ,kasoori methi, jaggery and let it boil. Then simmer for 3 to 5 minutes.</li>

<strong>Preparation Method:</strong><br />
<ul><li>Heat oil in a pan.</li>
<li>Add mustard seeds and wait till they splutter.</li>
<li>Now add onion , green chillies,curry leaves and crushed red chillies.</li>
<li>Once onion is brown in color,add turmeric powder and ginger paste and stir until the raw smell is gone.</li>
<li>Turn the heat to medium-high and add kovakka pieces and stir.</li>
<li>Cover the pan and cook for 3 mins.</li>
<li>Stir occassionally.</li>
<li>Now add salt and cook covered in low-medium heat for 4 to 5 mins.</li>
<li>Stir well and make sure there is no water content in the pan.</li>
<li>Do a taste test and add salt if necessary.</li>
<li>'Kovakka Mezhukkupuratti' is now ready to be served with warm rice and curry like Sambhar or serve with an indian bread Chappathi.</li>

<ul><li>Using water mix all purpose flour, corn flour, pepper powder and salt into a fine paste.</li>
